So, I found this recipe online and cooked it several times but, what I found was I like the recipe but, I was not in love with it (well kinda) so~ I tweaked it to work for me (meaning instead of pureeing the sun dried tomatoes I keep them whole... something about the taste...)
There is also something about having your family members taste your dish and let you know how great it taste! so I want to share (the picture) I'm also going to try to share the "recipe" or should I say the way I cooked it to work for me. It may resemble someone else's recipe out there (but probably not) but I want to share what I did to make it tasty for the fam.
and it looks good too...
4 Chicken Breast (cut in 1" cubes)
2 jars of julienne sun dried in olive oil (drain/reserve oil)
1 can of unsweetened coconut milk
1/2 tsp fresh thyme
1/2 tsp cumin
1 tbsp smoked paprika
1/4 tsp salt
add 3 tbsp of reserved oil to pan on med-high heat.
add chicken and seasonings, cook for at least 3 minutes each side
add coconut milk and simmer for 10 minutes or until chicken is cooked through
top over a bed of rice and enjoy.
I know this isn't a great run down of a recipe "per se" but at the end of the cook cycle~ I turned out a yummy freaking dish!! (at the least the family thinks so!!)

Walking in the market today I came across a vegetable I have never seen before, patty pan squash. Grown by a local farmer (plus), small (about the size of the palm of my hand.. Some larger) and I was curious to know how this was going to taste!!
After a bit of reading on this UFO shaped veggie I ended up cooking it the way I thought I would enjoy it most:
> I cut the ends off of both sides of the squash
> then chopped it into 1" cubes (if you have the small squash you will get about 4-5 cubes from one palm sized patty pan squash)
> heat about 2 tbsp of coconut oil (or you can use olive oil) in a sautéed pan until it shimmers.
>add squash, pepper, and a pinch of sea salt. sauté for about 3 minutes.
(optional) I had fresh basil and oregano I had just pulled from the garden so I cut some up and topped my squash with it after I plated it...
Super simple- extra healthy- and took a total of 10 minutes from prep to cook and I have to say~ it tasted amazing!

I would like for Sunday to be the day I finish chores and have the day to do what ever I want but... Around here there is this thing called "Sunday Funday". It usually consist of a small group of close friends (his) and what ever young lady is up for corn hole, sunshine, & food.
I do the cooking....
Well~ I do the sides and snacks while hubs gets the grill going and masters the meat we all love to enjoy (darn carnivores) I find that even though I always complain (initially) but-
by the end of the day-when the food is prepped and everyone is fed- I find myself enjoying all the laughter around me well... With the exception of the really bad music played extra loud... But at any rate. It's when I can sit down have a glass of whatever and enjoy those who are my family while away FRIM my family.
